And here’s even more exciting news: At the helm of the new Agave Rio is Executive Chef Eric Aldis—a star of the Houston culinary scene. Chef Eric started his career at the Four Seasons Hotel Houston, and has made a name for himself in culinary operations at such prestigious properties at the Bellagio Las Vegas and the Ritz-Carlton New Orleans. Locally, Chef Aldis has earned a reputation for bringing sustainable food practices to acclaimed restaurants including Mark’s American Cuisine, Mo’s and Corner Table.

We recently spoke to Chef Eric about his partnership with Agave Rio, and what wedding couples—and Houston foodies—can expect from Katy’s newest restaurant/celebration space. Here’s what we found out:

HWB: What makes Agave Estates special, and how does the venue and its setting inspire you?

Chef Aldis: Agave Estates is special because of the architecture, the beautiful landscape…and a professional culture to match. The venue and setting inspired me to create a menu of American cuisine using local and exotic ingredients.

HWB: What are some of the signature menu items you are creating for Agave Rio?

Chef Aldis: Oysters Agave (a hearth-roasted Blue Point oyster with salsa verde, lump crab and Mexican truffle, grilled at 900 degrees); Chauvinist Pig (a house-carved pork shoulder with bacon, prosciutto and brie, served on brioche bread)…and Shipley Donut Bread Pudding.

HWB: Yum! How does creating menus for wedding celebrations differ from creating restaurant fare, and what do you enjoy about developing personalized, special-occasion menus?

Chef Aldis: We pride ourselves on providing high-quality restaurant fare as well as menus for wedding celebrations. Preparation and planning are identical for both. I really enjoy developing personalized special-occasion menus. It gives me the opportunity to step outside the box and create—especially when cooking for guests with special dietary needs and providing a true 5-star experience.

HWB: What excites you most about your Agave Estates partnership?

Chef Aldis: This partnership excites me to be able to provide an entertainment venue for Katy, Texas—my hometown!

Though they attended the same Fort Bend high school, Holly and Elliott didn’t actually meet until years later at a birthday party. “I saw Elliott playing giant Jenga, and instantly his smile drew me in,” Holly recounts. There were smiles all around when Elliott surprised Holly with his proposal in front of more than 20 family members and close friends at a Thanksgiving dinner the couple hosted at their home. And more smiles still when 180 guests gathered for the couple’s sunset wedding at Katy’s Agave Road, where, after a night of celebration, the newlyweds snuck outside for a last dance to Frank Sinatra’s “Fly Me to the Moon.”

Lavender and Coral Wedding at Agave Estates

It was a normal shift for Jeremiah at the retail store he worked at until Melissa walked in. Melissa lost her keys and the nice guy that Jeremiah was, he decided to help. He spent an hour with Melissa trying to search the store for her keys. After they found them, Jeremiah jokingly told Melissa she owed him dinner. “I laughed it off and drove off… but it was a Saturday night and I was thinking, ‘I’m just going home to do nothing, what do I have to lose?’ So I called back and asked him to dinner. We went…and the rest is history,” says Melissa. We are sure you’ll instantly fall in love with their rustic-elegant wedding at Agave Estates, because we definitely did. Who says cheap wings and 99-cent margaritas can’t possibly lead to true love? Neither Iris nor James, that’s for sure. The lovebirds, who met randomly at a Pasadena, Texas, Western bar, “hung out all night that night, and have been hanging ever since,” Iris says. In 2012, James surprised Iris at her “Ugly Christmas Sweater” graduation party, bearing a piñata filled with faux diamonds and ring pops. “I finally got to take my blindfold off, and James went down on his knee and proposed to me in front of everyone,” Iris recalls. “And, of course, tears, happiness and Facebook posts ensued.” The couple’s vintage-elegant wedding, with its shades of coral, ivory and gray, and its touches of burlap and lace, was the perfect expression of their tastes, and their love. Iris says she’ll never forget “running through the corridor of ribbon wands during our final send-off.”
